Warm Mint and Potato Salad




Ingredients -
2 - Medium sized potatoes (cut into large chunks and boiled for 10 minutes)
1 - Small onion (Finely chopped)
1 - Large tomato (Finely chopped)
Handful of coriander leaves (Finely chopped)
2 table spoons - Mint chutney - (Grind a handful of mint, coriander, garlic, ginger, salt, green chilies and lemon juice finely )
1 table spoon - Lemon/ lime juice
Salt and pepper to taste
A dash of olive oil

Method
Add all the chopped vegetables into a bowl and add the dressing while the potatoes are still warm and serve.

Hand Painted Roses



Pink Roses - life just doesn't get any better







Choco Nut Cake & Vannila Cashew Cake (no egg and no oven needed)

Ingredients

1 cup - Flour
1 cup - Milk powder
1 cup - Milk
1 cup -  Powdered sugar
3/4 cup - Unsalted butter (at room temperature)
2 tsb - Cocoa power (no sweet) (if you want to make the choco cake)
1/2 cup - Nuts/ Tooti Frooti/ Candies/ Raisins
Half tsp - Vanilla essence, baking powder/soda and salt

How to make it -
(I have made 2 versions of the same cake with cocoa and without)

In a big bowl sift the flour, cocoa powder, salt and baking powder (don't add the cocoa powder if you want the vanilla cake)

2. In another bowl add the butter and powdered sugar and mix well until it is creamy. Then, add the milk powder, whisk for a minute until well combined and add the milk, butter, nuts and vanilla essence.You will end up with a delicious curdled batter (taste a bit to figure out if you need more sugar and adjust accordingly). The batter is heavenly!


3. Keep the batter in a well-greased vessel that fits into your cooker and garnish the top accordingly. Preheat the cooker on high heat for 2 minutes, keep the vessel inside (no whistle and no gasket) in medium high heat for 45 minutes to an hour. Insert a toothpick or a skewer to check if the batter sticks, if it doesn't switch off the flame and let it cool. I added cashews alone to the vanilla cake and almonds and cashews to the choco cake.

4. Here is how the cake looks after it has cooled down and been cut into. The vanilla cake should have a golden top to it and both the cakes should be a bit crisp around the edges.
