Quick n healthy Beans salad



Ingredients -

1 cup chick peas or black eyed peas - soaked overnight and boiled
1 big onion - chopped finely
1 big tomato - chopped finely
1 green chilly - slit and chopped finely
rock salt, garam masala (a pinch), extra virgin olive oil (few drops), dry mango powder or chat masala (a pinch), finely chopped coriander leaves to garnish.

Method -

In a large bowl combine all the ingredients, and all the olive oil at he end to blend and bring the salad together. remember to use only very few drops of the olive oil, serve chilled. (If you don't have olive oil, you can skip the step)

I am a big beans fan, i love the traditional "sundal" my mom makes. The sundal is so simple and easy and flavorful and the best part is its healthy. This makes a great salad and an evening snack. We all know how nutritious and healthy beans can be. Add whatever veggies you wish to, such as bell peppers,cucumber, boiled potatoes, what ever you have on hand!

Chili Tofu - Chinese Style


Chili Tofu (Chinese style) –
If you hate the rubbery texture and cardboard taste of tofu, then this is the right recipe for you! Enjoy this super nutritious treat and make it a delicious snack. Remember with tofu, ( if you don’t like the taste) you need to add ingredients that will overpower the taste of the tofu such as soya sauce, ginger, garlic, chili sauce etc to name a few!

Ingredients –
1.1 packet tofu – boil per instructions and chop them into thick, big bite size pieces
2.2 small tomatoes finely chopped (practically pureed, mash them up with a spoon if needed)
3.6 -7 garlic pods finely chopped
4.2 – 3 green/red chilies finely chopped
5.Soya sauce (add chili sauce too if you have it, I didn’t)
6.Salt
7.Corn flour
8.Turmeric
9.Olive oil
10.Water
Procedure –
1.Make a thick paste of the corn flour and water after adding turmeric powder and coat the tofu pieces well with the paste.
2.Now shallow fry the tofu in olive oil, after they turn golden remove them from the fire.
3.In the same pan, use the same oil and add the garlic and green chilies. Now sauté till golden brown.
4.Now add the finely chopped tomatoes and wait for them to become thick and dry.
5.Now add the tofu pieces as well as soya sauce and salt (as required)
6.Mix well, till all the tofu pieces are well coated and remove from flame.
This goes well with fried rice, nan, etc.

Don't be afraid to go a little overboard with the garlic and soya sauce, because the aim of this dish is to suppress the flavor of tofu. You can do the same with a packet of paneer if you really hate tofu :)

Soya Chunks Gravy


Soya in general has a lot of nutritional value and is high in protein. It can be very filling if made the right way, and is a great way to get a lot of protein into your diet, especially for hard core vegetarians like me.
Ingredients –
1 cup soya chunks - boiled in salt water for 10 minutes, drained, squeezed and cut into 4 pieces, leave the small ones alone
1 capsicum – diced
2 tomatoes – sliced
1 big onion – finely chopped
4 -5 garlic pods, 3 green chilies chopped finely, cumin seeds, olive oil
Salt, turmeric powered, coriander powder, cumin powder, red chili powder, garam masala (as required)

Procedure –

1.Sauté the cumin seeds, garlic and green chilies in olive oil
2.Add the onions and wait till they become glossy
3.Now add the diced capsicum and sauté till they fry a bit
4.Add the tomatoes and wait till it gets a little soggy
5.Now add the soy chunks along with the spices and mix till they blend nicely.

Allow the soy chunks to absorb the flavors really well. And serve hot.
