Egg Tadka




Yes i just came up with that name. I don't eat eggs very often, because I love them too much to stop with just one. I haven't eaten eggs in a long time but I give in to the cravings once in awhile. Like i did yesterday :D

Kadai Mushroom




So who likes mushrooms? I've been making a lot of these and loving them too. Full of vitamins and minerals, these are healthy and take very less time to cook. Never soak mushrooms, wash them under running water, and gently scrub away any black spots and dry them with a soft wet cloth or paper towel.

For making them -
You need -
1 box of mushrooms (chopped into bite size pieces)
1 medium size onion (finely chopped)
2-3 big pods of garlic (finely chopped)
2 tomatoes (sliced - doesn't matter because they are going to become paste like anyway)
2-3 green chillies (finely chopped or slit)
coriander leaves (finely chopped)
cumin seeds, salt, red chilly powder, cumin powder, coriander powder, turmeric and olive oil

How to make - 
1. Heat the oil in a kadai, add your cumin seeds, garlic, green chillies and onions.
2. After the onions have caramelized, remove them and add mushrooms.
3. Don't crowd the mushrooms and let them cook for 5 minutes (by this time the water from the mushrooms should have evaporated a bit)
4. Wait for the water to almost completely evaporate, and add the tomatoes (depending on how thick/thin you want your mushrooms let the water remain - i wanted it dry)
5. After the tomatoes become soggy add the onions and all the powders. Keep mixing till you get the consistency you are looking for and the powders mix with the mushrooms.
6. Garnish with coriander leaves and serve hot.
