I am one of the few people who actually has a single word that can describe them awfully well – “quixotic”! Easy to make Spinach and tomatoes
The recipe is very quick to make apart from the chopping time you will need about 15 minutes to finish it. Goes well with rice, chapathi, bread, and its great on its own too. I'm sure you will love this dish even if you hate spinach.
For this you will need -
2 cups spinach leaves (washed, you can keep the stalk if you want to), tomatoes 2 or 3 medium sized ones (finely chopped), onion - 1 medium sized (finely chopped), 2-3 garlic pods (finely chopped), green chiles - 2 -3 (slit - adding them is optional), chilly powder or chilly flakes, olive oil and oregano.
Method -
In a pan add the oil and after its really hot add in the onions and garlic and saute for a few minutes till the onions are transparent. Now add the tomatoes,oregano, chilly flakes and salt, cover them with a lid. After the tomatoes turn soggy take them out and keep them aside. Now add the spinach and you can see it melt almost immediately ( no need to add more oil). after it welts add the rest of the vegetables, give it a toss and serve. Simple and easy.
